Perfect for use in desserts, perfecting pastries with that mouth-watering glaze, or simply emulsifying sauce, liquid egg has a multitude of uses.
Our advanced equipment ensures the highest standards of hygiene, safety, and speed. Each egg is cracked and separated (if necessary), before being pasteurised. This process involves heat treatment to a temperature of 65.5°C to 68°C, and cooling to around 4°C, with an innovative auto diversion to adjust any products that does not meet the required temperature.
